Do you love fruit? What about strawberries? I love fruit and I would have to say that Strawberries are at the top of the list. Their sweet, colorful — and, well, just purdy! {smile} They’re so much fun to pick, eat and photograph! I remember having Strawberry Shortcake throughout the summer months growing up. It was light, delicious and refreshing. We almost always made ours with Bisquick biscuits. What is it with that Bisquick? It’s just so darn yummy! Remember my Bisquick Coffee Cake recipe? Mmmmm.
Anywho, I recently saw a Strawberry Shortcake Cupcakes recipe in the All You magazine (July Edition) where they layered strawberry jam and whip cream on a cupcake. It looked delicious; however, I found it to be a little to messy and not so pretty. I thought I would put my spin on it. They turned out great, with just the right amount of sweetness! A perfect summer treat.
Strawberry Shortcake Cupcakes
Ingredients
- Yellow Cake Mix
- Strawberry Jam
- Cool Whip
- Fresh Strawberries
Instructions
- Make a batch of cupcakes with yellow cake mix, allow to cool.
- Mix 3/4 cup of strawberry jam with 2 cups of cool whip, or to taste.
- Place in freezer for 30 minutes to thicken.
- Cut the cooled cupcakes in half crosswise.
- Top with Strawberry and Cool Whip topping.
- Repeat on top of cupcake, adding a dollop of cool whip.
- Garnish with slices of fresh strawberries
Paired with a cup of coffee (iced or hot), these Strawberry Shortcake Cupcakes are a perfectly light dessert to serve your summer guests! Do you have a favorite summer dessert?
