As most of you know, I made a trip home to New Jersey in April to visit my parents.  While there I thought it would be fun to make a dish or dessert with my mom to post around Mother’s Day.  That’s where this post comes into play.  We made this delicious dessert together, Ricotta Cheese Cake.  I don’t recall having it before, but mom said she’s made it plenty of times.  It was so moist and the perfect way to end a Sunday dinner together.

I also challenged myself to styling this dish with items around my parents house… it was a bit of a challenge {giggle}; however, I think I pulled it off.  Coffee/Tea paired with dessert is the perfect setting for catching up with mom on the latest greatest that is happening in life.  Wouldn’t you agree?  We both had fun and made some new memories together.  I also learned what a tea pot cover/cozy is (pictured below).  Honestly, it’s the cutest thing and it made me want to go out and find me a cute tea pot and cozy.

Kelly and MomSo, this post is dedicated to my beautiful mom (isn’t she adorable?).  I love and appreciate you so very much!  Thanks for being such a godly example, encouragement and inspiration! Oh and did I mention an incredible cook?  Now, let’s make some dessert.

Ricotta Cheese Cake

Prevent your screen from going to sleep

Ingredients

  • 1 Yellow Cake Mix
  • 1 15 oz. Ricotta Cheese
  • 4 Eggs
  • 1 cup Sugar
  • Fruit Topping of Choice

Instructions

  • Mix all ingredients until well blended.
  • Grease and flour a 9x13 pan.
  • Pour batter into pan.
  • Bake at 350 for 20-30 minutes (until cake pick comes out clean)
  • Let cake cool.
  • Top with fruit topping of choice.

    My former boss used to make that cake! I LOVE it. Not too sweet but just sweet enough 🙂 She always put fresh strawberries and blueberries on it and sprinkled with powdered sugar.

    On a side note, I will be in STL May 18-24 and was wondering if there were any must-sees/must-eats/must-shops! I will have a couple of free days!

    I *love* recipes that start with cake mix! Baking isn’t my most favorite kitchen activity, so recipes that give me a shortcut with fabulous results are the best! I haven’t heard of this one before, but it’s on my list to try this week. Thanks for sharing!
