In a large bowl, combine the strawberry cake mix, flour, water, softened butter, and egg.
Beat on low speed with an electric mixer until the ingredients are well blended.
Refrigerate the cookie dough for 30 to 60 minutes, or until it is firm enough to scoop.
Scoop heaping tablespoonfuls of dough and shape them into balls.
Roll each dough ball in granulated sugar until evenly coated.
Place the cookies approximately two inches apart on the prepared baking sheet.
Gently press each ball to flatten it slightly.
Bake for 12 to 14 minutes, or until the cookies are set.
Cool on the baking sheet for two minutes.
Transfer the cookies to a wire rack and allow them to cool completely.

This recipe was originally developed using an older, larger box of cake mix. Many cake mixes sold today contain less dry mix, which may result in stickier dough.Chill the dough for 30 to 60 minutes before shaping. A cookie scoop can make portioning easier. If the chilled dough is still too soft, add all-purpose flour one tablespoon at a time until it becomes scoopable.
