Heat the olive oil in a skillet over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant.
Transfer the sautéed onion and garlic to a large saucepan.
Add the crushed tomatoes, garlic salt, red wine, oregano, and sugar. Stir well to combine.
Bring the sauce to a gentle simmer. Reduce the heat and simmer uncovered for about 35–40 minutes, stirring occasionally, until the sauce thickens and the flavors develop.
Stir in the fresh basil during the last 5–10 minutes of cooking.
Taste and adjust the seasoning if needed. Serve over your favorite pasta.
Notes
If you have the time, feel free to let the sauce simmer a little longer. An extra 15–30 minutes can help deepen the flavor and thicken the sauce even more. Just keep it at a low simmer and stir occasionally so it doesn’t stick to the bottom of the pan.Fresh Tomato Option: Substitute about 2 pounds of ripe Roma or plum tomatoes for each 28-ounce can of crushed tomatoes. Peel and chop or pulse until crushed. Because fresh tomatoes contain more water, allow additional simmering time until the sauce reaches your desired consistency.
