A quick and healthy dinner served with a side of saautéed vegetables. This dish is prepared in one skillet and the salmon filets are smothered in a zesty cream sauce.

3salmon filets
salt and pepper, to taste
3tbspextra virgin olive oil
Sauce
1/2onion, chopped
1garlic clove, minced
1cuphalf and half
1/2tspdried thyme
1 1/2tbsplemon juice
parsley, chopped (for garnish)
Instructions
Salmon
Season the salmon filets with salt and pepper.
Heat the extra virgin olive oil in a large pan over medium heat. Add the salmon, placing the skin side down. Cook for 3 minutes and carefully turn the filet over and for 3 additional minutes or until slightly golden.
Transfer the filets from the pan to a plate and tent with aluminum foil.
Sauce
Add onion to the same pan the filets were cooked in and sauté for approximately 6 minutes or until tender and transparent.
Add the garlic clove and thyme. Sauté for 1 minute or until fragrant.
Pur the half and half into the pan and bring to a simmer.
Transfer the salmon back to the pan, spooning sauce over the filets.
Remove from the stovetop, stir in lemon juice and sprinkle with chopped parsley.
