Apple and Carrot Salad with Pistachios

Ingredients

cups
carrots
julienned
2
medium Macintosh apples
or other sweet apples, julienned
1/8
cup
lemon juice
2
tablespoons
sugar
1/2
teaspoon
ground cinnamon
1/2
cup
chopped pistachios
divided
Salt
optional
Instructions
In a large bowl, combine the carrots, apples, lemon juice, sugar and cinnamon.
Add 1/4 cup pistachios; toss to combine.
Season with salt, optional.
Refrigerate, covered, until serving.
Sprinkle with remaining 1/4 cup pistachios before serving.
