Greek Burger
Ingredients
Tzatziki dip or sauce
Salt and ground pepper

pitted kalamata olives

oregano
Fresh oregano for garnish

ground turkey
1/3
cup
crumbled feta cheese
plus sliced feta cheese for additional garnish (optional)

ripe tomato
chopped
Instructions
For the Olive Paste
Combine the olives, oregano and olive oil in a food processor.
Process until smooth.
The paste can be made up to 1 day ahead, covered and refrigerated.
Bring to room temperature before serving.
For preparing the burger
Heat the grill to high.
Divide the meat into 4 equal portions.
Form each into a 3/4" patty and make a deep depression in the center with your thumb.
Brush the burgers with oil.
Season both sides of each burger with salt and pepper.
Cook the burgers for 5 minutes on each side.
Add crumbled feta cheese and cover with aluminum foil during the last minute of cooking.
For assembling the Greek Burger
Place burgers on bun bottoms.
Spoon on tzatziki sauce and olive paste over each burger.
Top with chopped tomoato, sliced feta (optional) and oregano.
Cover with bun top and serve.
