Roasted Garlic Parmesan Chickpeas


  • 2 15-1/2 oz chickpeas
  • 1 tbsp. olive oil
  • 1 tsp. minced garlic
  • 1/2 tsp. sea salt
  • Fresh ground black pepper to taste
  • 1/2 cup grated Parmesan cheese


  1. Drain chickpeas.
  2. Spread the chickpeas on several layers of paper towels and let dry 30 minutes.
  3. Preheat the oven to 425. In a medium bowl, combine oil, garlic, salt and pepper. Add cheese and stir until crumble and oil is absorbed. Add chickpeas and toss to coat.
  4. Spread on a baking sheet and bake for 45 to 50 minutes, or until golden and crispy.
  5. Cool. When cooled, store in an air tight container.
