Greek Burger


  • Tzatziki dip or sauce
  • Salt and ground pepper
  • 3/4 cup pitted kalamata olives
  • 2 teaspoons oregano
  • Fresh oregano for garnish optional
  • 3-1/2 tablespoons extra-virgin olive oil
  • 1-1/2 pounds ground turkey
  • 1/3 cup crumbled feta cheese plus sliced feta cheese for additional garnish (optional)
  • 4 hamburger buns
  • 1/2 ripe tomato chopped


For the Olive Paste

  • Combine the olives, oregano and olive oil in a food processor.
  • Process until smooth.
  • The paste can be made up to 1 day ahead, covered and refrigerated.
  • Bring to room temperature before serving.

For preparing the burger

  • Heat the grill to high.
  • Divide the meat into 4 equal portions.
  • Form each into a 3/4" patty and make a deep depression in the center with your thumb.
  • Brush the burgers with oil.
  • Season both sides of each burger with salt and pepper.
  • Cook the burgers for 5 minutes on each side.
  • Add crumbled feta cheese and cover with aluminum foil during the last minute of cooking.

For assembling the Greek Burger

  • Place burgers on bun bottoms.
  • Spoon on tzatziki sauce and olive paste over each burger.
  • Top with chopped tomoato, sliced feta (optional) and oregano.
  • Cover with bun top and serve.
