Frozen Chocolate-Peanut Butter Banana-Cookie Bites

  • 2 tbsp. creamy peanut butter Jif is my go-to peanut butter
  • 1/2 cup prepared chocolate pudding with skim milk
  • 30 reduced-fat vanilla wafers
  • 1 large ripe banana cut into 15 slices


  1. Stir peanut butter into pudding until thoroughly combined.
  2. Spoon 1 teaspoon pudding mixture on flat side on each of the 15 cookies.
  3. Top each with 1 slice of banana and an additional teaspoon of pudding.
  4. Top with remaining cookies, flat side down.
  5. Store in airtight container and freeze until firm.
  6. Serve or store up to 2 weeks.
