Easy Chicken, Rice and Tomatoes

Ingredients

  • 1 12 oz package of yellow rice mix
  • 1 tablespoons extra virgin olive oil
  • 1/2 cup chopped onion
  • 1/2 cup chopped green bell pepper
  • 1/2 cup chopped carrot
  • 2 cups cooked cubed chicken
  • 1 15 oz can black bean, drained
  • 1 14.5 oz can Red GoldĀ® Original Petite Diced Tomatoes & Green Chilies
  • 2 cups shredded Colby & Monterey Jack Cheese

Instructions

  1. Preheat over to 350
  2. Prepare rice according to package directions.
  3. In a medium skillet, heat oil over medium heat. Add onion, green pepper and carrot; saute for about 10 minutes or until soft. Add cooked rice, chicken, beans, diced tomatoes and 1-1/2 cups of cheest to the skillet; stir to combine.
  4. Spoon the mixture from skillet to 9x13 baking dish and sprinkle with remaining cheese.
  5. Cover and bake for 30 minutes
  6. Uncover and bake an additional 10 minutes to melt cheese.
