Blueberry Muffins

Ingredients

  • 3/4 cup milk
  • 1/4 vegetable oil
  • 1 large egg
  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries canned or frozen work as well

Instructions

  1. Heat oven to 400ยบ F. Spray muffins cups (12 medium) with cooking spray or line with paper baking cups.
  2. In a large bowl, beat milk, oil and egg with fork or wire whisk until well mixed. Stir in flour, sugar, baking powder and salt all at once until flour is moistened (batter will be lumpy).
  3. Fold in blueberries. Divide batter evenly among muffin cups.
  4. Serve warm if desired.
