In reply to Kelly Rowe. I still remember the first time I ever tasted carrot cake. My sister worked at a magazine test kitchen in NYC c. 1962 and they just made a carrot cake for the first time to be published. My my I was smitten. I still have the recipe somewhere. I would always show up when they were baking something good. I also remember the first time I had zucchini cake at a christening c. 1973, and have that recipe too.
