Quick Sautéed Veggies
With two vegetables and a little seasoning, these sautéed vegetables come together quickly and compliment many dishes.
extra virgin olive oil
salt and pepper, to taste
Heat the oil in a pan over medium heat.
Add the onion and cook for approximately 5 minutes, until barely transparent.
Add the zucchini, eggplant, Italian seasoning, and salt and pepper. Stir to combine.
Cook for 7 minutes, stirring occasionally until the vegetables are tender and flavorful.
