1greenred or yellow bell pepper (of some of each), cut into chunks
1lb.chicken tenderloinscut into 1-inch pieces
1/2cupcornstarch
2large eggsbeaten
1cupsweet and sour sauce
2tablespoonsless sodium soy sauce
Chow Mein Noodlesoptional
Instructions
Prepare rice according to package directions.
Drain pineapple; reserve 2 Tbs. juice.
Dip chunks of chicken in egg and then into cornstarch.
Heat oil in large skillet over medium heat. Add peppers and onions. Cook until vegetables are tender crisp. Remove vegetables from skillet and set aside.
Cook chicken in same skillet until chicken is browned and cooked through.
Add vegetables back into skillet with sweet and sour sauce, soy sauce pineapple chunks and reserved juice. Heat through.
Serve with hot cooked rice and chow mein noodles, optional.
