Preheat panini press.
Spread olive oil on one side of each slice of bread.
Place 3-4 slices of bread, oil down, on the panini press.
Place 1/8 cup of mozzarella cheese, 4-5 slices of pepperoni, 2 tablespoons Mezzetta Roasted Red Peppers, 2 tablespoons of Mezzetta Deli Sliced Mild Pepper Rings, another 1/8 cup of mozzarella cheese on each slice of bread.
Cover with remaining 3-4 slices of bread, olive side up.
Close panini press and cook 3-4 minutes or until desired brownness.
