Chocolate Espresso Cookie Recipe


  • 1 package chocolate cake mix
  • 2 eggs
  • 1/3 cup vegetable oil
  • 1 package M&M'S® Holiday Baking Minis
  • 1/2 cup sprinkles
  • 2 tsp. espresso powder*
  • 1 can prepared frosting vanilla or peppermint flavor


  • Preheat oven to 350 degrees. In a medium-sized bowl, mix cake mix, eggs, and oil. Add espresso powder and mix.
  • For each cookie, roll 1/2 tablespoon of dough into a ball and place on cookie sheet.
  • Bake for 10-12 minutes.
  • Cool on baking sheet 1-2 minutes, then remove cookies from pan to cool on wire rack.
  • Using a small spoon, spread a small dollop of frosting onto each cookie. Sprinkle with Holiday baking mini M&M'S® and sprinkles.


*Substituting instant coffee for espresso works as well.
