We usually make a version of this in the crock pot. Do you think the instant pot could handle this recipe x3? I need 6 lbs of creamed corn for thanksgiving.

Always thought creamed corn was that abysmal looking gelatinous crud that comes in a can. No wonder I wouldn’t think it was worth eating. Well tonight we needed a side to go with hubbie’s garlic wings and the only thing I could find was a bag of frozen corn which had been in there all summer making it even worse than a can of gelatinous crud. I also have a new pressure cooker and thought, Hmmm, maybe creamed corn if it was HOME MADE! Well, boy oh boy, am I a creamed corn convert now!! Even more impressive, the teenage picky eater poured it down her throat! It was the cream cheese that brought it to new heights. I even have enough – just enough -leftover for cornbread.
