Doubt you’ll even see this since your original post is so old, but thought I’d throw it out there. I was just getting ready to make these cookies. I noticed I’d made some comments to myself in the margin…couldn’t decipher what I was trying to remind myself! Came to Google to see what some other recipes looked like. That’s when I found YOUR POST! I live in Manhattan, KS and got this recipe from a lady named Connie that I worked with at Stonecreek Family Physicians in the early 2000s! What a coincidence! Little old Manhattan, KS and banana cookies…CRAZY! BTW- figured out the note. It was just to remind me of the consistency of the frosting! Lol!

In reply to Nicky Riess. Hi Nicky! I honestly don't know and I hate to say, "go for it" and it be a complete flop. Feel free to experiment, but I can't say that I have tried it and it's worked. I wish I could be of more help. Keep me posted if you do try the substitution. Hugs!

Kelly, I am wondering if I could use butter instead of margarine in the frosting… would the frosting still come out the same?
